TUNA IN AMARANTH CRUST 6 servings

INGREDIENTS

FOR THE LOBSTERS

tablespoons chipotle chile in adobo, opened and seeded
4 tablespoons agave or maguey syrup
2 tablespoons white mescal
1 tablespoon freshly grated orange peel
salt to taste

FOR THE TUNA

720 g (1 2/3 lb)

skinless fresh tuna loin, cut into 6 rectangular portions
2 tablespoons of adobo chipotle chiles
1 tablespoon agave or maguey syrup
4

tablespoons olive oil combined with 2 tablespoons corn oil
4 to 5

huauzontles stems, clean, cut into florets and boiled in hot water for 2 minutes
fleur du sel to taste
olive oil to taste

FOR THE AMARANTH CRUST

10 tablespoons popped amaranth seeds

tablespoon chipotle chile in adobo, opened, stalk and seeds removed , finely chopped
1 teaspoon dried chile seeds
1 teaspoon coriander seeds
½ teaspoon dried coriander, crushed
½ teaspoon dried parsley, crushed
½ teaspoon dried thyme, crushed
¼ teaspoon dried oregano, crushed
½ teaspoon ground black pepper
fleur du sel to taste

PROCEDURE FOR THE SAUCE

Crush and combine the sauce ingredients with a fork and season. Set aside.

PROCEDURE FOR THE TUNA

Combine the chipotle adobo with 1 tablespoon of syrup and coat the surface of each tuna portion. Set aside.

PROCEDURE FOR THE AMARANTH CRUST

Mix the amaranth crust ingredients in a bowl and season. Place on a plate and cover each portion of tuna. Heat oil in a deep frying pan over medium heat and sear tuna for two minutes on both sides, to brown the crust while the interior of the cut remains pink.

SERVING METHOD

Serve huazontle florets with the sauce. Sprinkle with fleur du sel and drizzle with olive oil.

GLOSS

Fleur du sel is sea salt that is manually harvested and never industrially processed. Traditionally, it comes from France’s Atlantic coast, and is considered the “queen of salts” due to its thin, crunchy texture, lack of aroma and more subtle taste than common table salt. It is rich in calcium-based salts and magnesium, both beneficial to human health. In Mexico it is harvested mainly at Laguna de Cuyutlan in Colima.
