COFFEE WITH METATE CHOCOLATE Approximately 1 ½ l

INGREDIENTS

6 cups purified water
2 10 cm (4 in) cinnamon sticks
3 cloves
4 tablespoons grated piloncillo or brown sugar
2 tablets metate chocolate
1 cup ground coffee

PROCEDURE

Warm water in a saucepan over medium heat; bring to a boil. Reduce heat and add cinnamon, cloves, piloncillo (or brown sugar) and chocolate. Cook for 15 minutes, stirring constantly.
Subsequently add the coffee, stir, and turn off heat. Wait until the coffee settles the bottom of the pot.
Strain and serve hot.

They attributed a number of traits to it, such as an ability to satisfy hunger, slake thirst, or cure various diseases. It was so highly regarded, in fact, that it formed part of several rites and ceremonies, and its beans came to be used as currency.
