GREEN SHRIMP AGUACHILE 6 servings

INGREDIENTS

medium shrimp, heads removed, shelled, deveined and opened lengthwise
4 serrano chiles, open, seeded
½ cup water
1 cup lemon juice
1 tablespoon of chia (sage) seeds
sea salt to taste
ground black pepper to taste
¼ clove garlic, peeled

tablespoons of mint (leaves only) coarsely chopped
1 red onion, thinly sliced
1 pitahaya (dragon fruit), peeled and thinly sliced
2 lemons, thinly sliced and seeds removed

TO SERVE

corn chips as needed

PROCEDURE

Grind chiles with ¼ cup water. Set aside.
Combine water and chia seeds in a bowl. Let stand until the seeds are hydrated (swollen). Add the lemon juice and chiles. Add salt and pepper.
Arrange the shrimp in a bowl; incorporate the chia mixture and the mint. Garnish with slices of onion, pitahaya and lemon. Serve immediately with corn chips.

GLOSS

The name “aguachile” comes from the form in which this this water and chile dressing is prepared. It is a traditional dish along the Sinaloa and Nayarit coasts.
