PLÁTANOS AL TEQUILA 6 servings

INGREDIENTS

¾ cup sugar
½ cup freshly squeezed orange juice
1/8 cup white tequila
1 tablespoon butter
zest of 1 orange
zest of 1 lime

firm Tabasco bananas, peeled, cut in half lengthwise
½ l (1/2 qt) vanilla ice cream

PROCEDURE

Heat the sugar in a deep pan over medium heat to obtain a golden caramel. Add orange juice and tequila allow the alcohol to burn off.
Add the butter. Upon melting add the bananas and cook for 2 minutes then remove from heat. Add the orange and lime zest.
Serve immediately, with sauce and 1 scoop of ice cream.

GLOSS

In Mexico there are different banana varieties that come from the Musa family. Examples include the large plátano macho plantain and the dominico banana, the smallest. In terms of color, there is the red apple banana, yellow Tabasco and Perón bananas, and purple plátano morado, among many others.
