A note on the map and its gastronomic regions:
In order to explain the ways in which Mexico's natural and cultural diversity gave rise to its food diversity, we have adopted the regional divisions that historian and food expert Guadalupe Pérez San Vicente proposed. Pérez San Vicente is a pioneer in the field whose proposal also accounts for historical antecedents as well as agricultural, ranching and fishing production.
